Taste of Xi'an - Qishan Minced Noodles
I grew up in a city called Xi'an in China.
On the map, the city is positioned right in the middle of China. This is where the world famous Terracotta Army find their home.
Growing up in a city with more than 5000 years of history, I always heard people joke that you might hit some emperor's tomb when you throw a brick.
As a kid, I wasn't interested in history or local food. My family migrated from other parts of China after the Civil War. We cook a different kind of food at home. I would occasionally have local food at home when someone brought take out.
Despite of the lack of representation at the dinner table, there is one exception - Qishan minced noodles (see picture). It's a spicy and sour noodle soup with minced pork, wood ear, eggs, tofu, yellow daylily. A local favorite and carries out a long history since Zhou Dynasty. Traditionally, it was actually consumed in many occasions such as wedding, funeral, ancestor worship. Of course, nowadays, you can have it whenever you want it!
Hand pulled noodles with spicy and sour broth that are cooked with the minced pork for hours, and then add the vegetables. The noodles are very chewy but also soft because they have absorbed the rich broth. The vegetables are diced into small cubes so they cook easy and fast in the hot broth.
Fennels, cinnamon, anise, Qishan vinegar and Xi'an Oily and Spicy are mixed perfectly together to give you an unique taste sensation, expect a spice exposure in your mouth! :)
I usually like to order some stir fried shredded potatoes or cabbages and sour plum juice to go with my Qishan minced noodles. The plum juice is also a Xi'an local beverage that everyone loves!
I'm lucky enough to have an authentic Xi'an restaurants within 10-15 minutes drive. This place always satisfies my cravings for Xi'an food. I always feel that good food doesn't have to be expensive, but rather, it gives you a new tasting experience or brings back wonderful memories from the past. For me, coming here is emotionally satisfying because it takes me back home - Xi'an!

11/23 Dinner at Xi'an Kitchen (Yes, I know they don't have amazing reviews, and I have to say the service is not always that good. But for me, the authenticity of the food is more important. :)
